From Churn to Jar: The Beautiful, Slow Journey of Our Bilonaa Ghee

Step 1 — Asli A2 doodh. Subah 4 baje hamare farmer Gir aur Tharparkar gaaiyon ka haath se doodh nikalte hain. Sirf desi nasl ki gaay, sirf grass-fed, sirf A2 protein.

Step 5 — Dheemi aanch pe pakana. Makkhan ko peetal ki kadhai mein, lakdi ki aanch pe ghanton dheere-dheere pakaate hain. Tab jaakar woh dana-daar, sunehri, mehekti hui ghee banti hai.

Slow food matlab respect — gaay ka, kisaan ka, parampara ka aur aapki sehat ka. Ek machine 30 minute mein ghee bana deti hai, hum 2 din lete hain. Aur fark, pehle nivale mein hi pata chal jaata hai.

What are the steps of the bilona process?

Milk is boiled and cooled, cultured into curd overnight, hand-churned with a wooden bilona to separate makkhan, and the makkhan is slow-cooked into ghee.

How much milk makes one kilo of bilona ghee?

Roughly 25–30 litres of A2 desi cow milk are needed for one kilo of bilona ghee.

Why is the curd route used instead of cream?

Culturing the milk into curd first changes the fat structure and gives ghee its aroma, grainy texture and Ayurvedic value.

How long does the whole process take?

About 24–36 hours from milking to jar, since curd setting and slow cooking cannot be rushed.

Is machine-made ghee the same?

No. Machine cream-separator ghee skips the curd and churn stage, which changes both aroma and texture.

How is the ghee packed?

It is filtered warm and packed in food-grade glass jars (stainless steel dolchi for the 5 ltr pack) to protect aroma and purity.
