We use wooden madhanis for churning. Unlike metal blades, wood doesn't heat up during the high-speed rotation of bilona, preserving the delicate enzymes and vitamins in the makkhan.

We set our curd in clay pots. The porous nature of clay allows the curd to 'breathe', resulting in a richer microbial profile that eventually translates into a more aromatic ghee.
