In the sun-baked plains of Bikaner, one cow has quietly sustained families for centuries — the Rathi. Named after the Rath tribal community of northern Rajasthan, she is a true daughter of the desert: brown-and-white coated, calm-eyed, and famously heat-tolerant. The Rathi is a recognised indigenous (desi) breed with the classic hump and dewlap of Bos indicus cattle. She thrives on sparse desert grass, neem, and sewan — grazing that other breeds cannot survive on. This grass-fed, chemical-free lifestyle is exactly why her milk carries the pure A2 beta-casein protein prized in Ayurveda.

## Why Rathi milk makes exceptional ghee

Rathi milk is naturally rich in fat (4.5–5.2%) and A2 protein. When we slow-set it into curd, hand-churn it with the traditional Bilona method, and simmer the butter on a low flame, the result is a ghee that is deeply aromatic, grainy, and golden — the way ghee tasted in your grandmother's kitchen.
