## Step 1 — Free grazing on desert grass
Every morning our Rathi cows walk out to open pastures around Chhatargarh, Bikaner. They feed on sewan grass, moth, guar, and neem leaves — never on silage or chemical feed. That varied grazing is what gives their milk its deep yellow tint and warm aroma.
## Step 2 — Slow-set curd, not cream
Unlike factory ghee that separates cream from fresh milk, the Bilona method cultures the whole milk into curd overnight. This is the step Ayurveda insists upon: it makes the fat easier to digest and unlocks fat-soluble vitamins A, D, E and K.
## Step 3 — Hand-churning with a wooden bilona
At sunrise the curd is churned by hand in a clay pot using a wooden bilona. The rhythm — always clockwise, then anti-clockwise — separates makkhan (butter) without heat or machinery. No shortcut matches its texture.
## Step 4 — Simmering on a low flame
The makkhan is simmered slowly on a gentle flame until it turns clear gold and releases its trademark nutty aroma. Milk solids settle at the bottom — proof that nothing has been rushed. The ghee is then hand-strained into glass jars.
One 500 ml jar of Bilonaa ghee needs nearly 15 litres of Rathi cow milk. That is why it costs more — and why it tastes like nothing else.
