Packaging is part of the recipe, not an afterthought. Ghee is a living fat — it reacts to light, air, heat and to whatever surface it touches for months. Why glass is the default for everyday sizes. Glass is chemically inert. It does not leach, it does not hold the smell of the last thing it carried, and it does not soften when a Bikaner afternoon touches 45 degrees. You can see the grain of the ghee through the wall, which is itself a purity check — real bilonaa ghee sets in uneven, sandy crystals, not in a flat plastic-white sheet. For a 500 ml or 1 ltr jar that lives on a kitchen shelf and gets opened daily, glass is simply the honest choice.

Why the 5 ltr pack moves to stainless steel. A 5 ltr glass jar is a beautiful idea and a bad object. Filled, it crosses six kilograms, the walls have to be thick, the mouth becomes awkward for a ladle, and one slip on a kitchen floor ends the whole month. Food-grade stainless steel solves all four problems at once: it is unbreakable in transit, it is equally inert, it keeps light out completely, and a wide-mouth dolchi is the vessel Indian kitchens have used for stored ghee for generations anyway.

Steel is not a downgrade — it is the older tradition. Before glass jars arrived in Indian homes, ghee lived in brass, bronze and steel dolchis in the corner of the kitchen, and in earthen matkas in villages. Dadi never worried about her ghee going bad in steel. Modern food-grade 304 steel is simply that same tradition with a certified alloy: no reactivity with fat, no flavour transfer, and a lid that seals down flat.

What actually spoils ghee. Ghee has almost no water and almost no protein left in it, so bacteria have very little to work with. Its real enemy is oxidation — oxygen plus light plus heat slowly turning the fat rancid. Every packaging decision we make is aimed at those three: a tight seal for oxygen, opaque steel or a shaded shelf for light, and a cool corner away from the stove for heat. The leak question, answered plainly. Every glass jar we dispatch is sealed, then shrink-banded, then bubble-wrapped and cushioned inside a corrugated box that is filled so nothing can shift. How to use your jar at home. Keep one dry steel spoon for the jar and never let a wet or used spoon go in; a drop of water or a crumb of atta is what actually starts trouble. Close the lid fully rather than resting it on top. Store away from direct sunlight and away from the stove backsplash. You do not need to refrigerate — refrigeration only makes the ghee rock hard and encourages condensation each time you open it.

Is steel or glass better for storing ghee?

Both are inert and safe. Glass lets you see the grain and suits everyday 500 ml to 2 ltr sizes, while food-grade stainless steel is unbreakable, fully blocks light and is far more practical at 5 litres where a glass jar becomes heavy and fragile.

Why does Bilonaa not use plastic jars?

Plastic can soften and interact with hot fat, it holds odour, and it usually ends up in the bin. We use glass and food-grade steel so the pack protects the ghee properly and stays useful in your kitchen afterwards.

Does ghee need refrigeration?

No. Ghee is shelf-stable at Indian room temperature when kept sealed and away from sunlight and the stove. Refrigeration only makes it rock hard and causes condensation each time you open the jar.

Will my glass jar break in transit?

Each jar is sealed, shrink-banded, bubble-wrapped and cushioned inside a filled corrugated box so nothing shifts. If a pack ever arrives damaged or greasy, we treat it as a failed order and replace it.

How long does Bilonaa ghee stay fresh?
